« In Nizhny Novgorod people don't often spend money on cultural or intellectual pursuits, but they do love to display prosperity in the sense of going to a café and other forms of gastronomic wellness. If they can keep the quality up here and keep insisting on themselves as a viable establishment over a long period of time, they'll do fine. The location is good, the approach is creative, and the floor space isn't very large, which is practical.

All the pastries prepared that remain unsold at the end of the working day are eaten by the café's staff.
